This dish is loosely adapted from Mollie Katzen’s The Moosewood Cookbook. The main this I changed was the ingredients of the stir-fry. It was important for me to use things that were locally available at the farmer’s market. If eggplant isn’t your thing (it wasn’t mine for many years), I would suggest substituting with green beans, asparagus, and/or zucchini.

Stir-Fried Eggplant with Tofu

Sauce Ingredients:
* 3 1/3 Tablespoons soy sauce
* 1/4 cup cooking sherry
* 1 Tablespoon brown sugar
* 1 Tablespoon cider vinegar
* 3 Tablespoons cornstarch

Stir-Fry Ingredients:
* Peanut oil
* 1/2 medium red onion, finely chopped
* 1 medium eggplant, cut into strips
* 3/4 teaspoons salt
* 7 small cloves garlic, thinly sliced
* 1 1/2 Tablespoons fresh ginger, grated
* 1/4 pound button mushrooms, thinly sliced
* White pepper, to taste (I used 1/2 teaspoon, fresh ground)
* Cayenne pepper, to taste (I used ~1/4 teaspoon)
* 2 young Walla Walla onions (with green tops) or 3 shallots, green tops removed and set aside
* 1/2 pound (roughly) fresh tofu, sliced into strips

Combine the soy sauce, sherry, brown sugar, and cider vinegar in a 1-cup liquid measuring cup. Add enough water to make 1 cup. Stir gently with a whisk. Put the cornstarch in a small bowl, and pour the liquid into the cornstarch and whisk to dissolve. Set aside, keeping the whisk in the bowl.

Heat a large wok over high heat. Add a few Tablespoons of oil and the red onion, and stir-fry for about 1 minute. Add the eggplant and salt, and stir-fry for 5-6 minutes, until the eggplant is coated with oil and just starting to soften. Add the garlic, ginger, mushrooms, white pepper, and cayenne. Stir to coat and cook a few minutes longer.

Add the tofu and the white onions. Whisk the bowl of liquid, then add to the stir-fry. Mix well, coating all ingredients, and cook for a few minutes until the sauce has thickened.

Serve over rice, garnished with minced onion greens and fresh cilantro (optional).
